My Go To Pancake Recipe (Vegan)


I haven't self proclaimed myself a vegan yet but I do eat a mostly plant based diet. I try to make pancakes at least every Sunday for the kids, and of course myself, I love pancakes!! Often times I was missing an ingredient, like eggs or milk, or the recipe called for something ridiculous like buttermilk as if I had that on hand or want to wait for the vinegar and milk trick. No thanks.

Ok so feel free to double or triple this recipe. This is for 10 small pancakes or 5 large pancakes.

In one bowl:

mix

1 1/4 c all purpose flour

2 tbsp sugar (I've used coconut sugar)

2 tsp baking powder

1/2 tsp salt

some cinnamon

create well

In another bowl:

whisk

1 1/4c H2O (water)

1 tbsp oil (I've used coconut oil)

Add the liquid mix to the dry mix slowly while stirring

Ta da

I've tried to add a bit more baking powder to my mix just to have fluffier pancakes. These aren't going to be your typical All American diner pancakes but I've been told they're the best someone has had :)

For those who do not wish to do the math early in the morning here is the measurements for double the recipe

2 1/2 c APF

4 tbsp sugar

4 tsp baking p.

1 tsp salt

some more cinnamon

2 1/2 c H2O

2 tbsp oil

Sometimes I live dangerously and put blueberries and pecans or walnuts in them, I've even been known to put chocolate chips in them!
